My love of potatoes is well documented on this blog.
But there are times when even I want something a bit different.
And that’s where the ever-reliable cauliflower steps in.
It’s a great alternative for low-carbers or people that don’t like potato (I’ve heard these people exist..I didn’t want to believe it but it’s best that I face reality).
You barely notice the substitution, honest.
Not Potato Salad (serves 4-6)
*adapted from Elana’s Pantry
- 1 medium head of cauliflower, cut into florets
- 4 eggs, hard-boiled
- 1 clove garlic, minced
- 1/4 large, white onion, finely chopped
- 1 tbsp mayo
- 1 tbsp sour cream
- 1 tsp yellow mustard
- 1 tsp lemon juice
- salt and pepper
- Steam the cauliflower for 10mins until tender, but not mushy. Set aside to cool.
- Cut the eggs into small pieces and combine with the cauliflower florets, onion and garlic in a large mixing bowl. Season generously.
- In a separate bowl mix together the mayo, sour cream, lemon juice and mustard. Add this to the eggs, cauliflower and onions.
- Mix well and refridgerate until needed.

My husband is one such person who does not like potato salad *cry*!
He says he might be willing to try this if I omit the eggs. Personally? I’m just about licking my laptop screen here!

Love this idea! I also love making mashed cauliflower in place of mashed potatoes. That definitely feels like an indulgence without the extra carbs and sugary starch.
Mashed cauli is def on my list…loaded with butter and a little salt..mmmmmmmmmmmm

Love it, raw yellow squash is also another great alternative for not potato, or not macaroni salad, it has the same texture. I use it interchangeably in my recipes.

When I tried this, the mouth feel was not much like potato salad until I added cubed avocado.. Hubs and I enjoyed this and will add it to our list of favorites.

Hello! another awesome recipe! Found this one yesterday, and it will be in the regular rotation at my house for a while. Made it last night, but since I am doing whole30, I had to omit the sour cream. I added chives (cause they remind me of sour cream for some reason), and used home made mayo. Also added bacon. This will be a lifesaver for the whole30, and awesome for any time of the day. Had it warm with turkey sausage for breakfast this morning and was sad when it was over. Had to come back and thank you!
